Sweet potato filled with a black rice salad

Do you wanna have a vegan amazing lunch? Then I would recommend this. Do you like baked potatoes with this delicious filling? I do. And this is my awesome version, and guys: its SO easy.

You need for two persons:

2 big sweet potatoes

Black rice

Red onion

Spinach

Lemon balm

Carrot

Cumin

Pinch of salt

Cinnamon

Dijon mustard

Seasam oil

Turmeric

Vinegar


1 Put the potatoes in the oven on 150 degrees celsius until they're soft. It took me like 1.5 hours.

2 In the mean time; boil the black rice and cut the onion, spinach and carrot in small pieces.

3 Make a sauce of 1 tbsp sesamoil, 1 tbsp vinegar, 1 tbsp mustard, the pinch of salt, cinnamon, turmeric, and cumin after flavor.

4 Make a mix of the rice, the veggies, the lemon, the lemon balm and your sauce.

5 Open the potato, put the rice blending inside, and serve it with your amazing sauce and a fresh avocado salad.
